Eggless Black Forest Cake

Every time I see the snap of Black Forest Cake, I am so tempted to try it at home. But thinking about the richness of the cake and the calories, I just stay away from it. I have started taking cookery classes and one lady who came to get the details of the classes wanted me to teach Black Forest Cake. So it was the perfect time to try the cake and test the recipe. Immediately I started collecting all the ingredients required and made it the next day. I made an 8" chocolate cake, layered it with whipped cream and cherries, and frosted the cake with whipped cream and decorated it with cream and cherries.  I made the cake as two layers but if you want it, you can slice the cake into 3 or 4 slices and layer them with whipped cream and cherries. For the soaking syrup I used the syrup that came in the tin with the cherries. As whipped cream frosting is used, it is better to refrigerate the cake once it is prepared. And after the cream was set, I sliced it up. I was so excited. And it turned out awesome...The cream, cherries and chocolate cake mingle together to create a divine dessert...If you want to know what I am talking about, you need to try this cake. Eggless French Yule Log/ Buche de Noel

Yule log is long and hard log burned during traditional  Christmas and Yule celebrations. This cake is related to the log and is made for Christmas. It is called as Buche De Noel and the recipe has a lots of eggs to get the perfect sponge. This was suggested by Tanushree of Ma Niche along with so many other drool worthy recipes. This has been in my to do list for long and so I chose to do it for this month's Baking Partner's Challenge. Making the eggless sponge for the roll was a challenge. I have tried so many recipes in the past but always end with a cracky roll. So this time I googled for a perfect eggless sponge sheet and I came across one at Artisan Vegan Life. Eggless Classic Chocolate Whoopie Pie

Whoopie Pies are cross between a cake and cookie. With two cookie like cake slices with a sweet creamy filling, whoopie pie also tastes like cupcakes but they are easy to pack and carry. These are also known as Black moon, Bob, Gob or BFO (Big Fat Oreo). There are so many variations of the cake and filling. For this month's Daring Bakers Challenge, the host Bourbonnatrix of Bourbonnatrix Bakes selected an easy recipe. She gave us three versions of Whoopie Pies with three different fillings. I went for the Chocolate version but for the filling I used my butter cream recipe along with mixed fruit jam. Though the whoopie pie looks not very smooth on top, they tasted amazing. Nowadays, there is a craze of Choco Pies which come in individual packings. Sruti likes it so much but whenever she eats it she becomes sick. So it is completely banned at our house. When I saw this recipe I was happy to recreate my daughter's favourite snack at home and she too was so happy. My niece and my dad also like it so much. The two chocolate cookies have a crispy top and a soft crumb which goes very well with the jam and fluffy butter cream. When you take a bite, the combination sizzles your taste buds. This is pretty easy to make and assemble and it can make a great party snack...

Rainbow Cake With Ombre Frosting

Yesterday it was my daughter Sruti's birthday. For this day my daughter has been planning since 6 August. One fine day on August 2013, she came to me with i pad and asked me to look at a video clip on how to make a rainbow cake. And after I finished watching, she told me that I have to bake this cake for her birthday. I said OK and have been looking for different frosting techniques since then for the perfect birthday cake. I came upon so many techniques but every technique seemed either so easy or so tough. Finally I settled on Ombre technique. Ombre means shaded in French. This is used everywhere nowadays. A colour along with many shades of the same colour applied in a certain way makes it ombre. Even there is ombre hair colouring. So I decided to do Ombre Frosting with my daughter's favourite colours purple and pink.

Eggless German Tree Cake / Baumkuchen / Schichttorte

What is more challenging? Taking part in a Daring Baker's Challenge or twisting the given recipe to get a replica of the original bake? I think the latter is the most challenging as far as I am concerned. I joined the Daring Bakers as soon as I started the blog and it has been three years. There are only few challenges I have missed and I can proudly say that I have been quite successful in changing the recipes into eggless ones. In that list I can add this tree cake / Baumkuchen - a special cake from Germany. The cake consists of nearly 20 layers of sponge finally covered with chocolate glaze and decorated with almonds. Doesn't it sound rich and delicious. I have been eyeing this cake for long but never got the courage to try it as it has a huge number of eggs. But when I am given a challenge, I usually don't run from it. So I made this cake one fine day replacing all the 10 eggs in the original recipe. I am not completely satisfied with the result as the layers are not plainly visible. But still the cake tasted wonderful.

Decorating a Cake With Sugar Paste

Whenever I see a video on cake decorating, I will be tempted to try it out. That is how I tried so many buttercream decorated cakes. The next thing on my wish list was working with fondant. Fondant may not taste great but they make beautiful cake decorations. And the problem with fondant is it has egg  and gelatin in it. So it was always a dream for me to get a vegetarian and eggless fondant to try it on my cakes. One day I was going through an online store and came across a box of sugar paste. When I checked it was egg free and vegetarian. So I ordered for it immediately. When the box arrived I was so happy and so many crazy ideas started running through my head. But I wanted to make a simple cake as it will be my first trial. As I have gone through so many videos and cookery shows previously, the procedure was etched in my mind.

Eggless Orange Tutti Frutti Cake

This cake has been in my draft folder for so long. When I saw this recipe at Srivalli's Blog during the A-Z Blogging Marathon, I book marked it and made it for the next month's Cooking From Other Blog theme. But as I opted out of that Blogging Marathon, this has been lying in my drafts since then. The texture came out very different from Srivalli's cake but it tasted very delicious. The orange flavour was so strong and the tutti frutti added a nice colour and crunch to the cake. I served it topped with the caramel syrup. Never forget to mix the tutti frutti with flour, otherwise all the tutti frutti will sink to the bottom of the cake.

Eggless Pear Upside Down Cake

After a month long gap I am back in the Blogging Marathon. This is the Blogging Marathon #34 and I will be doing all the four weeks. For the first week, it is cooking with fruits. I chose Pear as the fruit and I am posting the very first recipe made with pear. As mentioned in my earlier post, I celebrated my birthday before two days. And for that I made this soft delicious cake with a nice caramel soaked pear topping. It has been my dream to try out upside down cake and it came true with this cake. Upside down cake is one in which the fruit layer is arranged at the bottom of the cake tin and the batter is poured on top. After baking the cake is flipped up side down and the fruits will become the topping. Caramel is added at the fruit layer and it gives a nice finish to the cake. I saw so many pear upside down cake recipes but finally went with my usual cake recipe. This recipe is best when done in a 9" or 10" pan. As I didn't have one I made it in an 8" pan and I was so nervous while it was in oven. But due to luck, the batter didn't over flow and it saved my day. The cake turned out so soft, moist and delicious. The caramel soaked pears were so soft and just melted in the mouth. We all loved the cake so much and Sruti was double happy as I made this for my birthday.

Eggless Pinacolada Cake

Pina Colada is the official beverage of Puerto Rico since 1978 according to WIKI. It is a drink made with pine apple juice and cream of coconut. There are so many variations of this drink and there are also so many cake and cupcake recipes based on this drink. I didn't know about the ingredients in Pina Colada until Meena suggested the Pinacolada cake for the monthly Baking Eggless challenge for this month. The recipe she suggested was in Polish and I translated it using Google Translate. The rewcipe had so many ingredients including cream of coconut which is not available at Madurai. So I googled Pina Colada cake and came upon so many variations. So I made my own version incorporating both pineapple and coconut which resulted in this rich cake. To my surprise this cake was liked by all the adult members of my family and kids didn't like it very much. Though Sruti ate a whole slice, she didn't come for a second serving.

Zebra Cake (Eggless)

Zebra cake is a combination of vanilla and chocolate cakes and the pattern is got by pouring the batters in a pan alternately. I have been trying to get the perfect zebra pattern but I am very sad that I have not yet succeeded. Actually I wanted more of the vanilla batter and less of the chocolate batter so that the lines are clean and neat. So I divided the batter into 3 parts, one for the chocolate batter and 2 for the vanilla batter. Even then I ended up with this not so good looking zebra cake. Though I missed the pattern, the taste was awesome and my daughter fell for this cake. She was so happy that mom has finally made it. This is the final post for the Blogging Marathon # 32, under cooking with alphabets and bakes theme. Finally I am so happy that I have completed this marathon successfully and I need to thank Srivalli for this wonderful idea. The cake batter is my usual condensed milk vanilla cake batter. Once when I prepared this cake the chocolate was looking very dull. I couldn't understand why it was happening. And one day I tried a chocolate cake with instant coffee powder added to it and the cake came out so dark and chocolatey. And this time I added a teaspoon of Nescafe instant coffee powder and look at the colour of the chocolate portion. It is nice and dark and very very chocolatey..
